Shrimp & Avocado ‘UP'

Serves 6

 

3 Ripe Avocados

2 Large Tomatoes

1 Scallion

12 Oz.  Cooked Shrimp, chilled

2 T Lemon Zest

1/2 C Mayo

2 T Gin (optional)

1/2 tsp Salt                   

6 Cracks Black Pepper

12 Cherry Tomatoes

6 Toothpicks

 

  1. In a large bowl, whisk together mayo, gin, lemon zest, salt and pepper.
  2. Medium dice avocado, large tomatoes and cooked shrimp. Slice scallion thinly. Gently fold mixture into gin-mayo. Taste. Divide into martini glasses.
  3. Place 2 cherry tomatoes on a toothpick. Garnish as you would martini olives.
